Months before The Mad Italian opened in 1973, the search had begun for the “Proper“ Italian Roll. After sampling the bread of several local bakers, we presumed the physical conditions in this city prevented the production of a roll which met our standards. Because of water quality, humidity and altitude, Atlanta bread was just not light enough to suit us.
Soon after this discovery, Allied Bakers in Long Island assured us they could supply the roll we desired. The regular hoagie roll is baked by the Cassone Bakery of Port Chester, New York and weighs only 3.5 ounces. It is made with pure vegetable shortening. We believe this to be the “ Proper” Italian Roll. We are sure you will agree.
